Use blender to purée boiled potato, almond milk and garlic.
Set potato purée aside for use in the soup.
Cooking soup
Water sauté the diced onion until translucent.
Use blender to purée can of diced tomato’s.
Add purée’d tomato, stewed tomato’s and potato purée to pot and set to medium heat. (I like to cut the stewed tomato’s into smaller chunks so the are easier to eat)
Add basil, oregano and pepper. Continue to simmer until soup starts to condense.
